Glazed Lemon Blueberry Loaf

Ingredients

  • 1 1/2 cupsall-purpose flour, plus 1 tbsp for the berries
  • 2 tspbaking powder
  • 1/2 tspfine salt
  • 1 cupgranulated sugar
  • 2 tbsplemon zest (about 2 lemons)
  • 2large eggs
  • 1/2 cupplain yogurt or sour cream
  • 1/2 cupneutral oil
  • 3 tbsplemon juice, divided
  • 1 tspvanilla extract
  • 1 1/2 cupsfresh blueberries148 median blueberries
  • 1 cuppowdered sugar (for glaze)

Steps

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with a parchment sling.
  2. Whisk flour, baking powder, and salt in a bowl.
  3. In a large bowl, rub the lemon zest into the sugar with your fingers until fragrant. Whisk in eggs, yogurt, oil, 1 tablespoon of the lemon juice, and vanilla.
  4. Fold the dry ingredients into the wet until just combined.
  5. Toss blueberries with 1 tablespoon flour and fold in gently.
  6. Scrape into the pan and bake 55–60 minutes, until a skewer in the center comes out clean. Tent with foil at 40 minutes if browning fast.
  7. Cool 15 minutes in the pan, then lift out and cool completely on a rack.
  8. Whisk powdered sugar with the remaining 2 tablespoons lemon juice and drizzle over the fully cooled loaf.

Notes

  • Rubbing zest into sugar releases the oils — it's worth the 30 seconds.
  • Glazing a warm loaf melts the glaze into a wet mess. Fully cool means fully cool.
