Blueberry Crumb Pie

Ingredients

  • 1 (9-inch)pie crust, chilled
  • 6 cupsfresh blueberries594 median blueberries
  • 2/3 cupgranulated sugar
  • 1/4 cupcornstarch
  • 1 tbsplemon juice
  • 1/4 tspfine salt
  • 1 cupall-purpose flour (for crumb)
  • 1/2 cuplight brown sugar, packed (for crumb)
  • 1/2 tspground cinnamon (for crumb)
  • 1/2 cupcold unsalted butter, cubed (for crumb)

Steps

  1. Preheat oven to 400°F (205°C). Fit the crust into a 9-inch pie dish and refrigerate.
  2. Toss blueberries with granulated sugar, cornstarch, lemon juice, and salt. Pour into the chilled crust.
  3. Rub flour, brown sugar, cinnamon, and cold butter together with your fingertips until the mixture forms large moist clumps — stop while the clumps are still chunky.
  4. Scatter the crumb evenly over the filling, all the way to the edges.
  5. Bake 20 minutes at 400°F, then reduce to 375°F (190°C) and bake 30–35 minutes more, until the crumb is golden and the filling bubbles through.
  6. Cool at least 3 hours before slicing so the filling can set.

Notes

  • Easier than a double-crust pie and more forgiving — no lattice, no crimping the top.
  • If the crumb browns before the filling bubbles, tent loosely with foil.
