Blueberry Streusel Coffee Cake

Ingredients

  • 2 cupsall-purpose flour, plus 1 tbsp for the berries
  • 2 tspbaking powder
  • 1/2 tspfine salt
  • 1/2 cupunsalted butter, softened
  • 1 cupgranulated sugar
  • 2large eggs
  • 1 tspvanilla extract
  • 3/4 cupsour cream
  • 2 cupsfresh blueberries198 median blueberries
  • 3/4 cupall-purpose flour (for streusel)
  • 1/2 cuplight brown sugar, packed (for streusel)
  • 1 tspground cinnamon (for streusel)
  • 6 tbspcold unsalted butter, cubed (for streusel)

Steps

  1. Preheat oven to 350°F (175°C). Grease a 9×9-inch pan and line with a parchment sling.
  2. Make the streusel first: rub the 3/4 cup flour, brown sugar, cinnamon, and cold butter together into coarse clumps. Refrigerate while you mix the cake.
  3. Whisk the 2 cups flour, baking powder, and salt in a bowl.
  4. Beat the softened butter and granulated sugar 3 minutes, until pale and fluffy. Add eggs one at a time, then vanilla.
  5. Add the dry ingredients in three additions, alternating with the sour cream, mixing only until each addition disappears.
  6. Toss the blueberries with 1 tablespoon flour and fold in.
  7. Spread the batter in the pan — it is thick, so smooth it with an offset spatula — and cover with the chilled streusel.
  8. Bake 45–50 minutes, until a skewer in the center comes out clean. Cool 20 minutes before cutting.

Notes

  • Chilling the streusel keeps it in distinct clumps instead of melting into a sandy layer.
  • The batter should be thick. Do not thin it out; that is what suspends the berries.
