5-Ingredient Blueberry Compote

Ingredients

  • 2 cupsfresh blueberries, divided198 median blueberries
  • 3 tbspgranulated sugar
  • 1 tbsplemon juice
  • 1 tbspwater
  • 1 pinchfine salt

Steps

  1. Combine 1 1/2 cups of the blueberries, sugar, lemon juice, water, and salt in a small saucepan over medium heat.
  2. Simmer 8–10 minutes, stirring occasionally, until the berries burst and the liquid is glossy and slightly thickened.
  3. Off heat, stir in the remaining 1/2 cup whole berries — they keep their shape and give the compote texture.
  4. Serve warm over pancakes, yogurt, or ice cream, or refrigerate up to 1 week.

Notes

  • The two-stage berry add is the difference between compote and jam. Don't skip it.
  • Swap 1 teaspoon of the water for vanilla extract or add a cinnamon stick while simmering.
