Rustic Blueberry Galette

Ingredients

  • 1 (9-inch)pie crust, chilled (homemade or store-bought)
  • 3 cupsfresh blueberries297 median blueberries
  • 1/3 cupgranulated sugar
  • 3 tbspcornstarch
  • 1 tbsplemon juice
  • 1/2 tsplemon zest
  • 1/4 tspfine salt
  • 1 tbspunsalted butter, cut into small pieces
  • 1egg, beaten (for wash)
  • 1 tbspcoarse sugar (for topping)

Steps

  1. Preheat oven to 400°F (205°C). Line a baking sheet with parchment.
  2. Roll the crust into a rough 12-inch circle on the parchment. Ragged edges are fine — that's the point of a galette.
  3. Toss blueberries with sugar, cornstarch, lemon juice, zest, and salt.
  4. Mound the filling in the center of the crust, leaving a 2-inch border. Dot with butter.
  5. Fold the border up and over the filling, pleating every 2–3 inches. The center stays open.
  6. Brush the crust with beaten egg and sprinkle with coarse sugar.
  7. Bake 35–40 minutes, until the crust is deep golden and the filling bubbles in the center.
  8. Cool on the sheet for at least 45 minutes before slicing — the filling sets as it cools.

Notes

  • If juice leaks through a pleat, leave it — it bakes into a jammy edge.
  • Frozen berries work; do not thaw, and add 1 extra teaspoon of cornstarch.
