Blueberry Cheesecake Bars

Ingredients

  • 1 1/2 cupsgraham cracker crumbs
  • 1/4 cupgranulated sugar (for crust)
  • 6 tbspunsalted butter, melted
  • 16 ozcream cheese, softened
  • 2/3 cupgranulated sugar (for filling)
  • 2large eggs, room temperature
  • 1/2 cupsour cream
  • 1 tbsplemon juice
  • 2 tspvanilla extract
  • 2 cupsfresh blueberries198 median blueberries
  • 2 tbspgranulated sugar (for swirl)
  • 1 tspcornstarch

Steps

  1. Preheat oven to 325°F (165°C). Line a 9×9-inch pan with a parchment sling.
  2. Cook 1 1/2 cups of the blueberries with 2 tablespoons sugar and the cornstarch over medium heat for 5–6 minutes, until thick. Press through a sieve if you want a smooth swirl. Cool.
  3. Stir graham crumbs, 1/4 cup sugar, and melted butter together and press firmly into the pan. Bake 10 minutes, then cool 10 minutes.
  4. Beat cream cheese and 2/3 cup sugar until smooth. Add eggs one at a time on low speed, then sour cream, lemon juice, and vanilla. Do not whip air into it.
  5. Pour the filling over the crust. Scatter the remaining 1/2 cup whole blueberries over the top.
  6. Dot the cooled blueberry sauce over the surface and drag a knife through it two or three times for a marbled swirl.
  7. Bake 35–40 minutes, until the edges are set and the center still has a slight wobble.
  8. Cool to room temperature, then refrigerate at least 4 hours before lifting out and cutting.

Notes

  • Overbeating after the eggs go in causes cracks. Low speed, stop as soon as it is smooth.
  • Wipe the knife between cuts for clean edges.
