Overnight Blueberry French Toast Bake

Ingredients

  • 1 (1-lb) loafbrioche or challah, cut into 1-inch cubes (slightly stale is best)
  • 8large eggs
  • 2 cupswhole milk
  • 1/2 cupheavy cream
  • 1/2 cuplight brown sugar, packed
  • 1 tbspvanilla extract
  • 1 tspground cinnamon
  • 1/2 tspfine salt
  • 2 cupsfresh blueberries198 median blueberries
  • 1/3 cupall-purpose flour (for streusel)
  • 1/3 cuplight brown sugar (for streusel)
  • 4 tbspcold unsalted butter, cubed (for streusel)

Steps

  1. Butter a 9×13-inch baking dish. Spread half the bread cubes in the dish, scatter 1 cup of blueberries over them, then layer the remaining bread and another 1 cup of berries.
  2. Whisk eggs, milk, cream, 1/2 cup brown sugar, vanilla, cinnamon, and salt. Pour evenly over the bread, pressing cubes down to soak.
  3. Cover and refrigerate at least 4 hours, ideally overnight.
  4. Preheat oven to 350°F (175°C). While it heats, rub the streusel flour, brown sugar, and cold butter together into coarse crumbs.
  5. Uncover the dish, scatter the streusel on top, and bake 45–50 minutes, until puffed, golden, and set in the center (a knife should come out without wet custard).
  6. Rest 10 minutes. Serve with maple syrup.

Notes

  • Fresh soft bread turns soggy — dry the cubes in a 300°F oven for 10 minutes if your loaf is fresh.
  • If the top browns before the center sets, tent loosely with foil.
