Blueberry Zucchini Bread

Ingredients

  • 1 1/2 cupsgrated zucchini (about 1 medium), squeezed dry
  • 1 3/4 cupsall-purpose flour, plus 1 tbsp for the berries
  • 1 tspbaking soda
  • 1/2 tspbaking powder
  • 1 tspground cinnamon
  • 1/2 tspfine salt
  • 2large eggs
  • 3/4 cupgranulated sugar
  • 1/2 cupneutral oil
  • 1 tspvanilla extract
  • 1 1/2 cupsfresh blueberries148 median blueberries

Steps

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with a parchment sling.
  2. Grate the zucchini, then wring it out hard in a clean towel. This step decides whether the loaf bakes through or stays gummy — you want the zucchini damp, not wet.
  3. Whisk the 1 3/4 cups flour, baking soda, baking powder, cinnamon, and salt.
  4. In a large bowl, whisk eggs, sugar, oil, and vanilla until smooth. Stir in the squeezed zucchini.
  5. Fold the dry ingredients in until just combined.
  6. Toss the blueberries with 1 tablespoon flour and fold in gently.
  7. Bake 55–60 minutes, until a skewer comes out clean. Tent with foil at 40 minutes if browning early.
  8. Cool 15 minutes in the pan, then turn out and cool completely before slicing.

Notes

  • You cannot taste the zucchini. It is there for moisture, and it works.
  • Under-squeezed zucchini is the single reason this loaf ever fails.
