Layered Blueberry Yogurt Parfait

Ingredients

  • 2 cupsplain Greek yogurt
  • 2 tbsphoney or maple syrup
  • 1/2 tspvanilla extract
  • 2 cupsfresh blueberries, divided198 median blueberries
  • 1 cupgranola
  • 1 tbsplemon juice
  • 1 tbspgranulated sugar

Steps

  1. Crush 1 cup of the blueberries with the lemon juice and sugar in a small bowl. Let stand 5 minutes until syrupy — this is a raw quick-macerate, no cooking needed.
  2. Stir the yogurt with honey and vanilla.
  3. In two glasses, layer in this order: yogurt, granola, macerated berries. Repeat.
  4. Top with the remaining 1 cup of whole fresh blueberries and serve immediately.

Notes

  • Assemble just before eating. Granola layered in advance turns to paste within an hour.
  • For a make-ahead version, layer everything except the granola and add it at the table.
