Baked Blueberry Hand Pies

Ingredients

  • 2 (9-inch)pie crusts, chilled
  • 2 cupsfresh blueberries≈ 198 median blueberries
  • 1/4 cupgranulated sugar
  • 2 tbspcornstarch
  • 2 tsplemon juice
  • 1/4 tspfine salt
  • 1egg, beaten (for wash)
  • 1 tbspcoarse sugar (for topping)

Steps

  1. Cook blueberries, sugar, cornstarch, lemon juice, and salt in a saucepan over medium heat for 5–6 minutes, until thick and jammy. Cool completely — hot filling melts the crust.
  2. Preheat oven to 400°F (205°C). Line a baking sheet with parchment.
  3. Roll each crust to a 12-inch circle and cut eight 4-inch rounds total, re-rolling scraps once.
  4. Spoon 1 heaping tablespoon of cooled filling onto one half of each round, leaving a 1/2-inch border.
  5. Brush the border with egg, fold into a half-moon, and press the edge closed with a fork.
  6. Space the pies on the sheet, brush tops with egg, sprinkle with coarse sugar, and cut a small vent slit in each.
  7. Bake 20–22 minutes, until deep golden. Cool 15 minutes — the filling is lava-hot straight out.

Notes

  • Overfilling is the #1 cause of blowouts. One heaping tablespoon, no more.
  • Unbaked pies freeze well; bake from frozen and add 3–4 minutes.
