Blueberry Banana Bread

Ingredients

  • 1 3/4 cupsall-purpose flour, plus 1 tbsp for the berries
  • 1 tspbaking soda
  • 1/2 tspfine salt
  • 1/2 tspground cinnamon
  • 3very ripe bananas, mashed (about 1 1/2 cups)
  • 3/4 cuplight brown sugar, packed
  • 1/2 cupunsalted butter, melted
  • 2large eggs
  • 1/4 cupplain yogurt or sour cream
  • 2 tspvanilla extract
  • 1 1/2 cupsfresh blueberries148 median blueberries

Steps

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with a parchment sling.
  2. Whisk the 1 3/4 cups flour, baking soda, salt, and cinnamon in a bowl.
  3. In a large bowl, stir mashed bananas with brown sugar, melted butter, eggs, yogurt, and vanilla until smooth.
  4. Fold the dry ingredients into the wet until just barely combined — a few streaks of flour are fine.
  5. Toss the blueberries with 1 tablespoon flour and fold in with three or four strokes.
  6. Scrape into the pan and bake 60–65 minutes, until a skewer comes out clean. Tent with foil at 40 minutes if the top darkens early.
  7. Cool in the pan 15 minutes, then lift out and cool completely before slicing.

Notes

  • The bananas must be genuinely overripe — heavily spotted or black. Yellow bananas give you bland bread.
  • Slicing warm banana bread tears it. Wait for it to cool fully.
