Soft Blueberry White Chocolate Cookies

Ingredients

  • 2 1/4 cupsall-purpose flour
  • 1/2 tspbaking soda
  • 1/2 tspfine salt
  • 3/4 cupunsalted butter, softened
  • 3/4 cuplight brown sugar, packed
  • 1/4 cupgranulated sugar
  • 1large egg
  • 1large egg yolk
  • 2 tspvanilla extract
  • 1 tsplemon zest
  • 1 cupdried blueberries
  • 3/4 cupwhite chocolate chips

Steps

  1. Whisk flour, baking soda, and salt in a bowl.
  2. Cream butter with both sugars for 3 minutes until pale and fluffy. Beat in the egg, yolk, vanilla, and lemon zest.
  3. Fold in the dry ingredients until just combined, then stir in the dried blueberries and white chocolate.
  4. Chill the dough at least 30 minutes — this prevents spreading and deepens flavour.
  5. Preheat oven to 350°F (175°C) and line two sheets with parchment.
  6. Scoop 2-tablespoon balls, spacing them 2 inches apart. Do not flatten.
  7. Bake 11–13 minutes, until the edges are set but the centers still look slightly underdone.
  8. Cool on the sheet 5 minutes before transferring. They finish setting as they cool, which is what keeps them soft.

Notes

  • Dried blueberries, not fresh. Fresh berries release water and turn cookie dough into cake batter.
  • Pulling them out while the centers look underbaked is the difference between soft and crunchy.
