No-Bake Blueberry Cream Cheese Pie

Ingredients

  • 1 (9-inch)graham cracker crust, store-bought or homemade
  • 8 ozcream cheese, softened
  • 3/4 cuppowdered sugar
  • 1 tspvanilla extract
  • 1 cupheavy cream, cold
  • 3 cupsfresh blueberries, divided≈ 297 median blueberries
  • 1/3 cupgranulated sugar
  • 2 tbspcornstarch
  • 2 tbspwater
  • 1 tbsplemon juice

Steps

  1. Cook 1 1/2 cups of the blueberries with granulated sugar, cornstarch, water, and lemon juice in a saucepan over medium heat for 6–8 minutes, until thick and glossy. Cool completely.
  2. Beat cream cheese with powdered sugar and vanilla until completely smooth, scraping the bowl twice.
  3. In a separate cold bowl, whip the heavy cream to stiff peaks.
  4. Fold the whipped cream into the cream cheese mixture in three additions, keeping it light.
  5. Spread the filling into the crust and smooth the top.
  6. Stir the remaining 1 1/2 cups fresh blueberries into the cooled sauce, then spoon evenly over the filling.
  7. Chill at least 4 hours, preferably overnight, before slicing.

Notes

  • Room-temperature cream cheese is the whole game — cold cheese gives you lumps you cannot beat out.
  • The sauce must be fully cool before it touches the filling or the cream will weep.
